Round Steaks with Gorgonzola Butter

Who would have thought Eye of the Round Steaks could be that delicious?? A quick lime marinade, mix the gorgonzola or any blue cheese with butter, and you have a pretty fancy steak coming up! Try not to over-cook them as they are extremely lean (read no fat at all)...

Ingredients
  

  • 1/4 cup lime (or lemon) juice
  • 4 tsp gorgonzola or blue cheese crumbles
  • 4 tsp butter, softened
  • 2 tsp olive oil or butter to cook steaks in
  • 4 strips thin bacon
  • 1 pinch coarse sea salt and freshly ground pepper

Instructions
 

  • Thaw steaks and then marinate them in some lime or lemon juice for an hour or two.
  • Mix the softened butter (not melted) and the cheese well, shape into a 2" thick stick and place in fridge to harden. (You can use this butter mix for any steaks...)
  • Heat up some butter or olive oil in your skillet.
  • Wrap each steak with a strip of thin bacon (you can also cut the bacon in half lengthwise) and attach with a toothpick (be sure to remove before serving!)
  • Sprinkle some coarse sea salt and freshly ground pepper on the steaks.
  • Cook steaks over medium-high heat, a few minutes on one side. Turn over carefully not to loose the bacon strips and add a 1/4 to 1/2 inch thick slice of the hardened butter/cheese mix on the turned over steaks. Cook a few more minutes until steak is cooked medium. Butter will be partly melted.
  • Serve with fresh mushrooms cooked in a light cream sauce with some brandy or cognac if desired that can all cook with the steaks. Remove toothpicks...!
