Ingredients
  • 2 lb JX Ranch Ground-Beef
  • 1 egg, beaten
  • 1/2cup milkor half & half if you want to make it extra yummy…
  • 1/4cup Worchester saucerather less than too much…
  • 1small onion, chopped
  • 1/2cup Italian bread crumbsor regular bread crums
  • pinches salt, pepper, cumin, garlic saltand or any other seasonings you like
  • 1/4cup green chileoptional
  • 1 tomato
  • 1Tbsp olive oil
  • 1pinch Basilfresh if you have, dry is fine too
Instructions
  1. Mix all ingredients( except the last three) together and place in a meatloaf pan.
  2. Decorate top of meatloaf with slices of tomatoes sprinkled with a little olive oil and basil.
  3. Place in 350 degree oven for 50 – 60 minutes until done. Serve with mashed potatoes and gravy and green beans for happy bellies around the table!

Mimi’s Tip: You may as well make two meatloaves; freeze one after cooked – it’s so handy to have something that’s quick to heat in the microwave when you’re in a hurry to get a meal ready!
